My 2017 MBP is showing 97% capacity. It's my daily driver. So at this rate I can expect the SSD to last 291 years? Really? Either these numbers are bogus, or the capacity drop over time is far from linear.

That's just the wear capacity; an SSD can still suffer random failures at any time. The controller and DRAM aren't designed to last for decades.
